Special call out to Lawrence LeVine who introduced me to www.GetCrocked.com! Since I’ve been on a crock pot binge, I scanned every single (yes really, EVERY) recipe that was posted on that website. I found this one which was insanely easy, Gabby friendly and low fat.

Easy Sweet and Sour Chicken

 Ingredients
 - 6 boneless, skinless chicken breasts
- 3 cups low sodium chicken broth
- 2 carrots, peeled and chopped into ¼ inch pieces
- ½ tsp. crushed red pepper flakes
- 1 & ½ cup sweet & sour sauce - I didn't measure just made sure everything was covered
- 1 - 20 oz. can pineapple chunks in juice
- 1 - red pepper, seeded & chopped
- 1 - green pepper, seeded & chopped
- 1 - small onion, peeled & sliced
- Sesame seeds (for garnish) - I skipped for Gabby's behalf
- Rice (for serving)
Instructions
 - Put carrots in bottom of the crock pot.
- Place chicken in a single layer directly on top of carrots
- Pour chicken broth in crock pot so that chicken is just covered, sprinkle with red pepper.
- Cover and cook on LOW for 6 hours.
- Remove chicken & carrots from crock pot and discard chicken broth.
- Return chicken to crock pot and pour in the sweet & sour sauce.
- Top with the drained pineapple, onions and peppers.
- Cover and cook on HIGH for 45 minutes.
- Serve over rice and sprinkle with sesame seeds.
Good news, the adults that ate it LOVED it! Bad news, the kids wanted nothing to do with it. I refuse to accept that they couldn’t enjoy this sweet meal so I will be making every effort to get them to eat it again. Anyway, you should most definitely try this, as well as check out www.GetCrocked.com
