Love me some buffalo

Adam and I enjoy anything buffalo related…except maybe the animal.  I was intrigued by this easy, healthy version.  Anyone ever try Skinnytaste’s Buffalo Cauliflower??  Amazing!!  (Click here for that)  I found a version of that at the store.  I have yet to try though..

Note:  Although my kids are generally good eaters, I would not go so far as to expect them to enjoy some spicy buffalo chicken wraps (even though I would love for them too).  So I slow cooked some chicken thighs in chicken broth earlier in the week.  For the kids, I shredded chicken and mixed with marinara.  I put the chicken on Hawaiian bread with provolone cheese.  It made them happy and I wasn’t exactly making 2 meals.  I generally don’t condone different meals for kids but this was an exception.  Plus, I could make ours super spicy as a result!

Buffalo Chicken Lettuce Wraps

Ingredients
  • 2 large chicken breasts, cooked and shredded (I used boneless chicken thighs because I think they are less dry in the crockpot)
  • 2 Tbls. butter (I didn't use butter or olive oil)
  • ½ Tbls. olive oil
  • ½ cup Franks Wing Sauce
  • ½ tsp. celery seed (I bought it but also didn't use it, Franks has enough flavor in my opinion)
  • pepper to taste
  • ½ C. thinly sliced celery
  • blue cheese crumbles (I used dressing instead)
  • ranch dressing
  • 2 heads of lettuce
Instructions
  1. In a large pan, cook and shred your chicken {to cook mine, I just put the chicken in the pan with ½ cup of water, shredding as it cooks. By the time it is finished cooking, all of the water cooks off}.
  2. Keep the pan on medium heat. Add butter and olive oil, stirring. Add Franks and celery seed. Add pepper to taste. Once sauce begins to be bubbly, remove from heat. Add thinly sliced celery.

 

It felt like a win/win. Adam and I loved our buffalo and the kids loved their sandwiches. Next onto my new cauliflower!!!!
