Muffin, dear?

Since life has been so calm lately (insert major sarcasm here), I decided to host a brunch Sunday. And that means baking. So I went to my most favorite site for recipes these days, PINTEREST!!! I found these which seemed easy and low-fat (perfect mix for me). I expected my kids to not be the biggest fans since they don’t have chocolate or white flour, things that seem to be a requirement for their pallets.


Applesauce Oatmeal Muffins

Ingredients
  • 1 cup old fashion rolled oats (not instant)
  • 1 cup non-fat milk (I used almond milk)
  • 1 cup whole wheat flour
  • ½ cup brown sugar
  • ½ cup unsweetened applesauce
  • 2 egg whites
  • 1 tsp. baking powder
  • ½ tsp. baking soda
  • ½ tsp. salt
  • 1 tsp. cinnamon
  • 1 tsp. sugar
  • raisins or nuts (optional, I opted out)
Instructions
  1. Soak the oats in milk for about one hour.
  2. Preheat the oven to 400 degrees.
  3. Spray muffin pan with cooking spray.
  4. Combine the oat mixture with the applesauce and egg whites, and mix until combined.
  5. In a separate bowl measure and whisk the dry ingredients together.
  6. Add wet ingredients to dry and mix until just combined. Add nuts or raisins if desired.
  7. Do not over mix the batter or the muffins will be tough. Spoon muffin mixture into muffin pan.
  8. Combine the cinnamon and sugar and top each muffin with some of the mixture.
  9. Bake for 20-25 minutes or until done.
  10. Remove from pan, cool and enjoy.
  11. These can be frozen and reheated in the microwave for a quick breakfast.

 

This was the recipe that I was starting when I ran out to the grocery store, came back and showered in vomit. So the oats ended up soaking overnight but still did the job rather well! The amazing part about these muffins is that everyone, kids included, LOVED them. They were a perfect snack for a sick girl who was easing back into eating. They became a desirable dessert option for my “doesn’t need anymore sugar” son. And they were even a delicious coffee accommpaniment for my husband’s breakfast. Hopefully everyone loves them Sunday for brunch too!
