Cranberries…not just a band

With Thanksgiving on the horizon, why not embrace a little cranberry in your life?!? Not to mention, cranberries are known for having tons of antioxidants and being a super food. I’m not sure they are as effective when you throw in boatloads of sugar and other things. We will just ignore that part for our purposes. We can thank my wonderful grandmother for this goodie…

 

Cranberry Bread

Ingredients
  • 4 eggs
  • 2 cups sugar
  • 3-1/2 cups flour
  • ¾ tsp baking powder
  • 1-1/2 tsp baking soda
  • 1 tsp salt
  • 1 cup vegetable oil
  • 2 cups chopped cranberries
Instructions
  1. Preheat oven to 350.
  2. Beat the eggs and sugar together until light and fluffy. Stir together the dry ingredients - flour, baking powder, soda, and salt. Fold into egg mixture. Add the oil and cranberries.
  3. Pour into two greased and floured 9"x5"x3" loaf pans. Bake for 55 minutes to one hour.
  4. Makes 2 loaves.

 

If you like cranberries, you’ll love this.  I, of course, love the Gabby friendly component of this recipe.  We all enjoyed and it was easy to make.  Problem with this recipe is that it’s very seasonal so you can only make it around this time of year, otherwise it’s near impossible to find cranberries (I tried).

  1. Cranberries freeze really well. If you plan ahead (which I rarely do :)), you can make it all year round.
