My Zesty Hummus

December 23, 2011

With the list of holiday parties growing, there’s an endless amount of things for me to make. I decided to bring an appetizer that was Gabby friendly to our Chanukah party tonight. Gabby friendly hummus means that she cannot have tahini, a key ingredient for hummus. So originally I started with this recipe…

Easy Roasted Red Pepper Hummus

Recipe type: Appetizer

Total time:

Ingredients
  • 2 cloves garlic, minced
  • 1 (15 ounce) can garbanzo beans, drained
  • ⅓ cup tahini
  • ⅓ cup lemon juice
  • ½ cup roasted red peppers
  • ¼ teaspoon dried basil
Instructions
  1. In an electric food processor, combine garlic, garbanzo beans, tahini, and lemon juice. Process until the mixture is smooth. Add roasted peppers and basil; process until the peppers are finely chopped. Season with salt and pepper. Transfer hummus to small bowl, cover and chill until you are ready to serve.

Next time I will cut back on the lemon juice because it was way too tart without the tahini. In efforts to save it, I added olive oil, water, red pepper, carrots and onions. As a last resort I added brown sugar. It is extremely flavorful.

Kids seem to like it and it’s healthy. So I consider it success.
