Pumpkin, we meet again

This recipe has become my family’s (as well as everyone else I have introduced to it) favorite fall treat. And although I said I was not going to bake anymore, I have found myself baking again. I have to give credit to my friend, Ashley Kamin, who introduced me to this awesome fall favorite.


Pumpkin Bread

Bread/Cake
Ingredients
  • 3-1/2 cups flour
  • 2 tsp baking soda
  • 1-1/2 tsp salt
  • 1 tsp cinnamon
  • 1 tsp nutmeg
  • 3 cups sugar (I sometimes make it with 1-1/2 cups to make it more low-cal)
  • 1 cup vegetable oil
  • 4 eggs
  • 15 oz can pumpkin
  • ⅔ cups water
Instructions
  1. Sift dry ingredients together and add to combined wet ingredients. Mix well and pour into two greased pans (loaf pans). Cook for 1 hour on 350.
