In honor of the Jewish New Year, I baked my Great-Grandma’s cake. Actually I’ve been baking it a lot lately. Mostly because it passes several requirements…

a) It’s easy
b) Gabby can eat it and enjoys eating it
c) We just went apple picking and have so many apples
d) It’s not super fattening
e) It’s delicious

My new favorite ingredient:

It looks like, smells like, tastes like butter but it’s not! How cool!!! (Maybe this explains why I’m Soooo Uncool, because I think things like this are cool)

Apple Cake

Ingredients
  • 1 stick of margarine (1/2 cup of
  • 1 cup of sugar
  • 1 cup of flour
  • 2 eggs
  • 1 tsp baking powder
  • 1 tsp vanilla
  • 2-3 apples
  • Cinnamon sprinkled over apples
Instructions
  1. Mix together flour, sugar, eggs, baking powder, vanilla and margarine with a wooden spoon. Batter will be soft. Spray pan (8x8). Cut apples into chunks. Spoon half of the batter into pan and spread half of the apples on top. Sprinkle cinnamon on top of apples. Spoon in the other half of batter and the rest of apples. Reapply cinnamon to the top.
