There’s something about fall that makes me want pumpkin and apple things all the time! So in honor of that, I researched some dairy-free, baked egg dessert options and stumbled upon pumpkin cookies.
- ½ cup shortening
- 1¼ cups packed brown sugar
- 2 eggs
- 1 teaspoon vanilla extract
- 1½ cups canned pumpkin
- 2½ cups all-purpose flour
- 4 teaspoons baking powder
- ½ teaspoon ground cinnamon
- ½ teaspoon ground nutmeg
- 1 cup raisins (I skipped this)
- 1 cup chopped walnuts (I skipped this too)
- Preheat oven to 375 degrees F (190 degrees C).
- Cream shortening and sugar, then add the eggs. Mix well. Add vanilla and pumpkin. Set aside.
- Sift dry ingredients, then blend into the "wet" ingredients. Fold in the nuts and raisins. Mix well.
- Drop by heaping teaspoons onto a greased cookie sheet, bake for 10 - 15 minutes. Cool. Best eaten if you let them "ripen" for a day. Store in a sealed container.
I doubled the batch, which I almost always do, so I can either freeze some or bring somewhere. As a result, I always find the cook times to be a little off. So the first batch I burnt the bottoms, although still delicious. The second batch I under cooked and had to keep putting toothpicks in to find they needed a couple of minutes.
They are yummy but seem like they need something else. Maybe cool whip? Maybe chocolate chips? They might be good with the raisins and walnuts but I’m not a raisin person and walnuts are choking hazards. The best part though is that Gabby seems to love them! First major success I’ve had! Go me!!!!

To never burn cookie bottoms again, just buy airbake cookie sheets. I use them all the time and not just for cookies, but for biscuits, crescent rolls and other foods my kids like.

You can get airbake cookie sheets at Bed Bath and Beyond. Remember to bring some 20% off coupons too! You cannot burn cookies or breads with these sheets. You could probably overbake cookies into rock hard hockey pucks, but the bottoms will never burn again. I guarantee it.
