Sugar Cookies

We have embraced fall full force this year. In addition to apple picking and all the delicious foods that came from that, we have been eating pumpkin in cookie, bread and cake forms too. Now we are venturing down a universal, appropriate for any outing sugar cookie recipe! The kids loved decorating them for Halloween too!


Sugar Cookies

Ingredients
  • 2 cups sugar
  • 1 cup butter (it said "no substitutes but I used Best Life due to Gabby's allergies)
  • 1 teaspoon vanilla extract
  • ½ teaspoon salt
  • 2 eggs, lightly beaten
  • 2⅔ cups all-purpose flour
  • 2 teaspoons baking powder
  • ¾ teaspoon baking soda
Instructions
  1. In a mixing bowl, cream sugar, butter, vanilla and salt. Add eggs and mix well. Combine flour, baking powder and baking soda; add to creamed mixture. Chill until firm, about 1 hour.
  2. On a floured surface, roll dough to ¼-in. thickness. Cut with a 2-1/2-in. cookie cutter; place on greased baking sheets. Bake at 375 degrees F for 7-8 minutes or until light golden brown. Decorate if desired.

 

I found these to be delicious! They were a big hit in the house, no coaxing needed for consumption! And we had a ton of fun decorating them too. They were, however, a huge pain to clean up. The dough was heavy, sticky and hard to maneuver. Maybe this is a silly review of the recipe but I’m not going to be rushing to make more of these. Clean up was a HUGE pain. And frankly if I keep baking, I’m going to end up three hundred pounds! I think I need to go back to cooking more and baking less. Stay tuned!
