Almost every Chanukah party I’ve been invited to, I have been asked to bring a dessert. It works out well for me because that usually seems the hardest area to find “Gabby friendly” options. So by being designated the dessert lady, I can ensure she can eat it. The only caveat to this plan is that I no longer have any will to actually cook or bake a thing. Fortunately in expecting I would feel this way, I baked a bunch while I still had some more of my faculties. Despite planning ahead, I couldn’t keep up with all our needs. So I decided to use my trusty crock pot which makes everything so very easy!
Years ago my grandma, my cooking mentor Nana, used to make a fruit compote. This recipe couldn’t be more perfect for the cold, holiday season. I had saved it ages ago and had not tried it. And when you want to find a crock pot recipe, where better to look than Crock Pot Girl, Get Crocked! (www.getcrocked.com)?! Nowhere!
- 1 lb. can peach halves
- 1 lb. can pear halves
- 1 lb. can apriocot halves
- 1 lb. can pineapple chunks
- 4 med. bananas, sliced
- 15 maraschino cherries
- ⅓ c. walnut halves
- ⅓ c. margarine
- ⅔ c. brown sugar
- ½ tsp. curry powder (or to taste) **I detest curry so I skipped
- Drain fruit. Pour canned fruit into crock pot. Add bananas.
- Scatter cherries and walnuts on top.
- In skillet, melt margarine. Mix in sugar and curry powder. Pour over fruit.
- Cover. Cook on Low 2 hours.
- Note: Serve hot as a side dish to beef, pork, or poultry; serve warm as a dessert; or serve cold as a topping for ice cream.
This recipe could NOT be any easier or any more delicious (unless you could find a way to incorporate chocolate). I served with low fat vanilla ice cream and Tofutti for Gabby. It was a perfect warm yet cold dessert for this season. Everyone loved it…but Gabby. What else is new though?!?!
