Homemade meal that a mother of three kids could pull off!

Last year I fell in love with my crock pot. It’s not that I fell out of love with it during the summer, it just didn’t seem as appropriate. I found a place for my grill to pick up where the crock pot left off. Fortunately for my dear friend crock pot, (despite the warm temperatures of this week) I have dusted it off and fallen in love all over again. If it weren’t just so darn easy to use…

Crock Pot Girl was introduced to me last year www.getcrocked.com and I haven’t been the same since 🙂 This recipe, however, I had saved and never made. Both my grandma and mother-in-law, who are amazing cooks, make versions of this chicken the old fashioned way. So I thought I would give it a go…

 

Crock Pot Catalina Chicken

Ingredients
  • 4 Chicken Breasts
  • 1 cup apricot jam
  • 1 cup catalina or french dressing
  • 1 & ½ packet Lipton Onion Soup Mix
Instructions
  1. Place chicken in a crock pot.
  2. Combine the remaining ingredients in a bowl; pour over chicken.
  3. Cook on low for 6-8 hours.
  4. Serve over rice or pasta. (I did brown rice with some veggies on the side)

 

I’m new to this set it and go, seemed weird to me to keep it on all day. That being said, my house smelled awesome all day long! It was the easiest recipe ever and everyone but my impossible to feed kid liked it! I’d even venture to say that it might be a meal I could pull off while managing three kids, so that should give you an idea how very easy it is!!! I don’t believe the nutritional information on the website because I used fat free dressing, low sugar apricot jam and lean chicken breasts so I believe (despite it tasting very sweet) it is a low fat meal option.
