Spinach Passover Casserole

Ingredients
  • 2 - 10oz. frozen spinach
  • ½ cup margarine (a whole stick!)
  • 1 clove garlic
  • 2 tbsp. potatoe starch
  • ½ can condensed onion soup
  • ½ cup matzah meal
  • 2 eggs (I use egg whites)
  • salt and pepper to taste
Instructions
  1. Cook spinach according to directions, drain well. Melt margarine in a skillet and sautee garlic. (I cheated and melted margarine in the microwave and scooped garlic from the jar). Blend potato starch, stir in onion soup, remove from heat. Stir beaten eggs and matzah meal into spinach, add soup mixture and salt and pepper. Pour into well greased ½ quart casserole dish. Bake at 350 for 25 mins.
